Essential fatty acids (linoleic, linolenic, arachidonic, eicosapentaenoic, docosahexaenoic acids):
Sources – vegetable seed oils, margarine, fish oils
Function – membrane structures; precursors of prostaglandins, leukotrienes, prostacyclins, thromboxanes and hydroxy acids
Deficiency  growth cessation, peripheral neuropathy
